This great recipe is easy to make and the kitchen will be filled with scents of banana and brown sugar.
Even if you don’t need a gluten free diet you should try this version which tastes even better than with traditional flours. We used Red Mill from the health food section of the supermarket. Also can usually substitute brown sugar and/or applesauce for white sugar. You can put all the ingredients in a large blender and be ready to bake in five minutes.
1. Gluten-Free Banana Bread Recipe
Preparation Time: 5-10 minutes. Baking Time: 45 minutes. Yields: 24 Servings
Ingredients
- 3 cups of gluten free all-purpose baking flour (Bob’s Red Mill)
- 1 teaspoon of baking soda
- ¼ teaspoon of salt
- 4 eggs
- 2 cups of mashed bananas (4-5 medium)
- 1 cup of brown sugar (use 1/4 on top)
- 1 cup of unsweetened applesauce (organic preferred)
- ⅓ cup of canola oil (or coconut oil)
- 1 teaspoon of vanilla extract
- ½ cup of chopped walnuts
- 1/2 cup flaxseed
Directions
- In a large bowl, combine the flour, baking soda, flaxseed and salt. In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened. Use blender if a smoother consistency is desired) In a hurry, put all ingredients into large blending bowl!
- Transfer batter into two 8 in. by 4 in. loaf pans coated with cooking spray. Swirl top with brown sugar. Bake at 350 degrees for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing pans from wire racks.
